Apple Cake

They are open for lunch
Monday through Saturday
from
11 a.m to 3:45 p.m.,
but if you come early at
9:30 a.m. you can get a
cup of coffee and a
fresh slice of
homemade pie.

In a large mixing bowl, stir together:
4 cups of chopped raw apples
2 cups sugar
1 Tablespoon Lemon Juice
1 teaspoon salt
2 teaspoons Cinnamon
Let stand while preparing a 9" x 12" loaf pan, greased and lined with heavy wax paper, greased and floured.
Now add:
2 eggs, well beaten
1/2 cup melted butter or margarine
2 cups flour
2 teaspoons baking soda
Stir to mix well.
Bake at 350° for 35 - 40 minutes.
When done, allow to stand about 5 minutes then turn out onto a plate.
Frosting on cooled cake (if desired) --
1-1/2 cups Powdered Sugar
1 Tablespoon Lemon Juice, and
enough cream, or milk, to make the right consistency to spread.
