Mix together: 1/2 cup mayonnaise 1 Tablespoon minced onions 1/4 teaspoon salt In a shallow dish, mix together: 1/3 cup bread crumbs 1/3 cup Parmessan cheese 1/2 teaspoon oregano 1/2 teaspoon basil Slice into 1/4" slices. 1 eggplant Dip each slice into the mayonnaise mixture, then into the dry mixture. Layer into a baking dish. Bake at 425° for 15 minutes.
