Fried Cabbage

Peal and cut lengthwise once. Lay flat side down and cut lengthwise into 1/4" thick slices, including the core.

      1 head green cabbage

In a hot skillet add:

      1 tablespoon butter
      all the sliced cabbage

Don't stir too often as some of the the cabbage needs to blacken in the butter, that is why butter is used instead of olive oil. The blackened cabbage will become sweet tasting.

After some of the cabbage has been blackened, turn down the heat and fry until most of the cabbage wilted and then add:

      freshly ground black pepper, to taste
      salt, to taste

Transfer to a warmed serving dish.

Add fried bacon pieces, cooked fettucini or egg noodles, sprinkle with your choice of cheese.
