Meatloaf made with Stove Top Stuffing

In a large bowl, toss the stuffing mix with the beaten egg:
 1 (6-ounce) package Stove Top Stuffing, any flavor
 1 large egg (beaten)

Mix into the stuffing and let set for 10 minutes:
 1 cup hot water

Add and mix:
 2 pounds ground beef or ground turkey
 1 chopped onion (optional)

Place the meat into a loaf pan and slightly indent the top of the meatloaf.  Cover top with the TOPPING (see below) mixture.

TOPPING:
 1/2 cup ketchup
 1 tablespoon brown sugar
 1 teaspoon Coleman's powdered mustard

Bake at 350 degrees for an hour.

NOTE:  This recipe can be made the night before and refrigerated.  Then just pop it in oven when you get home.  It gives the stuffing a chance to flavor the loaf more while it sits.
