Stuffed Bell Peppers

Prepare the rice:
Bring to a boil in a medium sauce pan:

      3/4 cup raw rice
      1-1/4 cups water

Lower heat to simmer.
Cover and let simmer for 20 minutes.
Remove from heat.
Remove lid and let cool.



Remove tops an clean the insides of:

      6 Bell Peppers (any color)

Mix together:

      1-1/2 pounds ground beef or turkey
      2 cups cooked rice (cooled)
      1 can Campbell's Tomato Soup (10 oz)
      1 chopped onion
      2 eggs
      1 teaspoon salt
      1/2 teaspoon black pepper

Gently stuff the meat mixture into each bell pepper.

Stand the peppers upright in a large pan.

Mix together and genlty pour over the peppers:

      1 (26 oz) can of Campbell's Tomato Soup
      3 cups water


Bring to a boil, then simmer covered for 1 hour.

Serve by cutting each pepper in half, lengthwise, and spooning the tomato soup sauce over them.
One whole pepper per person.
